Beer can chicken -> salad and chicken-> lunch #2

The first post covered what I do with left over roast chicken. For the large birds we buy (5-7lb) birds, locally grown we generally have quite a bit of left overs to deal with. The second lunch that I make from the left over roast chicken is a simple chicken salad. My friends know I’m not talking about chicken, celery, and mayo, as I don’t do mayo. I’m talking about either a simple Caesar or garden salad served with the left over roast chicken, and homemade croutons. It’s not a fancy meal, just chopped up the chicken with mixed greens and some otherĀ  fresh vegetables. However, it’s better than what you’ll find at most salad bars, and you aren’t paying by the oz. Good croutons are really easy to make, and make a big difference in a simple salad like this. So take some greens, your left over chicken, and make some fresh croutons out of that left over stale bread.

Garlic Cheese Croutons

Preheat oven to 350

Take day old bread and cut in cubes. In a large bowl, toss with a few tablespoons of olive oil and a diced clove of garlic.

Place in single layer on a baking dish.

Bake for 15 minutes or until golden brown
