Leftovers for breakfast? Frenchtoast
What about leftovers for breakfast? I’m not talking about cold pizza, I’m talking about good old fashion french toast. This never was a favorite of mine as a kid, I’ve always preferred over easy eggs on toast. However as we now have a nearly unending supply of eggs, I’ve been exploring other options, and these are now one of my new favorites. Simple, made of stuff found in your cupboard, using stale bread.
French toast
Serves 2
4 eggs
4 - 6 slices of stale bread, I use honey 12 grain
1 cup milk
1 teaspoon vanilla
2 tablespoons of brown sugar or maple syrup
1 tablespoon of Cinnamon
1 grate of nutmeg
2-3 tablespoons of butter for frying
Combine eggs, milk, vanilla, brown sugar, cinnamon, nutmeg, wisk.
Pour custard mix into a shallow dish (I use a pie pan, or 9x9 baking dish).
Heat in a medium nonstick frying pan over medium heat 1 tablespoon of butter
Soak a single piece of bread in the custard mix while pan is heating, flip to absorb equally on both sides.
When butter is starting to get foamy, add first slice to the pan.
Add second slice to the custard mix while cooking the first, be sure to coat it evenly.
When the bread is browned on side one, flip and watch for the french toast to puff up, that’s when you know the inside custard has cooked. Repeat with remaining slices.
Since the rest of your meal is nice and cheap, you can splurge and serve this with real maple syrup (grade A Dark recommended), it makes a big difference.
