grill it, then skillet.

Those who know me, will tell you I’m a tex-mex fan. From tacos to burritos, to rice and beans, and most things in between. They will also say that I’m a big fan of cheese. While last nights dinner was neither cheese, nor tex-mex, that won’t stop me from making it into the tex-mex version of grilled cheese. Taking grilled vegetables turning it into quesadillas is not rocket science.

2 tortillas
1/2 cup mixed grilled vegetables chopped into bite sized pieces
Cheese

In a oiled skillet over medium heat add tortillas, so they fold in the middle.
Layer cheese, vegetables, then cheese again.
Grill until brown on side one.
Flip and brown side two.

Top with sour cream, salsa, and hot sauce. Enjoy.

Pretty much any protien, vegetable, and cheese will make a good quesadilla.
